2. Beetroot paratha
This recipe can give your traditional parathas a nutritious twist. Grate the beetroot and mix it with the wheat flour, spices and herbs of your choice. Roll out the dough and cook it in a pan. These reddish parathas can be a vibrant addition to your breakfast or lunch menu.
3. Beetroot salad
Salads are a great way to start the day on a nutritious note. “Cut the beetroot into small pieces and mix with other salad ingredients like cucumber, tomatoes and feta cheese. Drizzle with olive oil and lemon juice, sprinkle with salt and you have a refreshing beet salad ready,” suggests Dr. Sisodia.
